SLIDERS CHICKEN PARMESAN



CHICKEN PARMESAN SLIDERS




Fried chicken tenders, tomato sauce, and lots of mozzarella cheese make this slider recipe a sure win.

Ingredients
·         1 Slider buns
·         1 lb Breaded Chicken Tenders * *These should be cooked already** (weight is approx.)
·         2 c Pasta sauce
·         2 c Mozzarella cheese , shredded
·         1/2 c Parmesan cheese , shredded
·         3 tbsp Butter , melted
·         1 tsp Garlic powder (more to taste)
·         1 tsp Italian seasoning
Instructions
1.     Preheat oven to 350°F.
2.     Place the bottom half of the slider buns in a greased casserole dish.
3.     Place cooked chicken tenders on the bottom buns and then cover them in sauce.
4.     Combine the mozzarella and Parmesan cheese and sprinkle it over the sauce.
5.     Place the top buns on the sliders.
6.     Melt the butter and mix the garlic powder until it is thoroughly combined. (feel free to add more garlic powder if you like garlic as much as I do!)
7.     Pour the melted butter over the buns and then sprinkle with Italian seasoning.
8.     Cover the dish with foil and bake for 10 minutes, then remove the foil and continue baking for another 10 minutes.
9.     Enjoy!

 Chicken avocado Feta Salad is a delicious twist to a  in a bowl! With a dressing that doubles as a marinade you won't even miss the bread in this mega loaded salad.

Ingredients
Balsamic Dressing / Marinade:
·         1/3 cup balsamic vinegar
·         1/4 cup olive oil
·         2 tablespoons water (or more oil if you wish)
·         2 teaspoons Italian seasoning
·         2 teaspoons minced garlic
·         1 teaspoon honey
·         1/4-1/2 teaspoon salt (adjust to your tastes)
·         4 skinless and boneless chicken thigh fillets (or breast fillets)
Salad:
·         5 ounces |150g bacon , diced and trimmed of all fat
·         8 cups mixed salad lettuce leaves (or Romaine | Cos lettuce leaves)
·         2 tomatoes , chopped
·         1 red onion , thinly sliced
·         avocado , sliced
·         1/4 cup crumbled feta cheese
·         extra Italian seasoning
·         salt and pepper , to taste


Instructions
1.      Whisk dressing / marinade ingredients together until well combined. Pour 2-3 tablespoons into a shallow bowl. add the chicken thighs and coat evenly. Season with salt and pepper; set aside for 10 minutes while the frying bacon.
2.     Fry bacon until crisp in a skillet over medium-high heat. Wipe pan over with paper towel.
3. Cook chicken fillets until crisp and cooked through (about 7 minutes each side).
4. Arrange all salad ingredients in a large bowl. Top with the bacon, chicken, avocado and sprinkle with feta, extra Italian seasoning and salt and pepper to your tastes. Drizzle with the remaining dressing, and serve.

CHRISTMAS MINI COOKIES

These bite-sized Christmas Mini Cookies are a fun take on a classic Chocolate Chip Cookie and look so Christmas with the Red & Green.

INGREDIENTS:

· 1 cup Butter (Sweet Cream, Salted)
· 1 cup Dark Brown Sugar
· 1/2 cup White Granulated Sugar
· 2 Eggs
· 1 tablespoon Vanilla
· 2 3/4 cups All-Purpose Flour
· 1 tsp. Baking Power
· 1 Cup Mini Semi Sweet Chocolate Chips
· 1 Cup Red and Green M&M Minis
· Cookie Sheet

Instructions
1. Cream the butter and sugars with a mixer if you have one.
2. Add the eggs and vanilla and mix until fully combined.
3. Add the baking powder and mix.
4. Add the flour 1 cup at a time and mix until combined.
5. Using a spoon, fold in the chocolate chips.
6. Mix in the Red and Green M&M Minis.
7. Take a small spoonful of dough (each cookie was .5 oz.) and roll it into a ball.
8. Press the ball down slightly on the cookie sheet.
9. If you have any M&M’s left over, press in a couple onto the top of the cookie ball.
10. Bake the cookies in a 375 degree oven approximately 8 minutes until they are golden brown on the bottom and around the edges.

·         1 cup semi sweet chocolate chips
·         1 cup all-purpose flour
·         ¼ cup unsweetened cocoa powder sifted to remove lumps
·         ¼ teaspoon salt
·         1 teaspoon baking powder
·         ½ cup butter softened
·         ¼ cup granulated sugar
·         ½ cup light brown sugar packed
·         1 egg lightly beaten
·         1½ teaspoon vanilla extract
·         Christmas sprinkles to decorate
Instructions
·         Preheat oven to 325 degrees F/170C
Prepare 2 cookie sheets with baking paper
·         In a microwave-safe bowl, melt the chocolate chips on medium power in 30 second intervals until just melted.

Ingredients
·         8 slices bacon
·         1 1/2 lbs ground sirloin
·         1 medium sweet onion diced
·         3 Tbsp Worcestershire sauce
·         1 15 oz can light red kidney beans drained
·         1 14 oz can tomato sauce
·         1 10 oz can Rotel Chili Fixins Tomatoes
·         2 Tbsp dark chili powder
·         1 Tbsp ground cumin
·         1 tsp garlic salt
·         1 tsp lemon pepper
·         1 tsp Mexican oregano
·         3 cups shredded Pepper-Jack cheese divided
·         12 oz thin spaghetti
·         pickled jalapeno slices, amount to taste
·         sliced green onions for garnishing
Instructions
1.     Preheat the oven to 350°F. Brush the bottom and sides of a 12-inch cast iron skillet with olive or vegetable oil. Set aside. 
2.     In a separate large skillet, cook bacon over medium-high heat until crisp. Remove to paper towels to drain and crumble. Reserve 3 Tbsp drippings in skillet.
3.     add the ground sirloin and diced onion to the bacon drippings. Cook over medium-high heat until no pink remains and the onion is softened.

  • Cream together the butter and cream cheese in a stand mixer, or in a large bowl with a hand mixer.
  • Slowly add the powdered sugar and beat on low until combined.
  • Add the vanilla, salt, and flour. Beat until just combined.
  • Stir in 3 tablespoons of the sprinkles and combine into the dough.
  • Roll the dough into approximate 1 balls, and then into the remaining sprinkles.
  • Place the cookies onto parchment lined baking sheets and bake in a pre-heated 350-degree oven for 20-22 minutes.
  • Cool completely and enjoy!
