SLIDERS CHICKEN PARMESAN



CHICKEN PARMESAN SLIDERS




Fried chicken tenders, tomato sauce, and lots of mozzarella cheese make this slider recipe a sure win.

Ingredients
·         1 Slider buns
·         1 lb Breaded Chicken Tenders * *These should be cooked already** (weight is approx.)
·         2 c Pasta sauce
·         2 c Mozzarella cheese , shredded
·         1/2 c Parmesan cheese , shredded
·         3 tbsp Butter , melted
·         1 tsp Garlic powder (more to taste)
·         1 tsp Italian seasoning
Instructions
1.     Preheat oven to 350°F.
2.     Place the bottom half of the slider buns in a greased casserole dish.
3.     Place cooked chicken tenders on the bottom buns and then cover them in sauce.
4.     Combine the mozzarella and Parmesan cheese and sprinkle it over the sauce.
5.     Place the top buns on the sliders.
6.     Melt the butter and mix the garlic powder until it is thoroughly combined. (feel free to add more garlic powder if you like garlic as much as I do!)
7.     Pour the melted butter over the buns and then sprinkle with Italian seasoning.
8.     Cover the dish with foil and bake for 10 minutes, then remove the foil and continue baking for another 10 minutes.
9.     Enjoy!

Grilled Chicken Blueberry Feta Salad with Lemon Poppy Seed Dressing






This salad is not basic or boring. It is LOaDED with lots of tasty ingredients!
·greens
·grilled chicken

·feta cheese
·avocado
·almonds
·red onion
·lemon poppy seed dressing

I told you it was loaded! We eat a lot of salads during the hot summer months and I want the salads to be hearty because a salad is usually our meal, with watermelon on the side. We always have watermelon:)
a few salad notes:
·The lemon poppy seed dressing serves as a dressing and marinade for the chicken. It is easy to whisk up and adds a lot of flavor to the chicken and salad. You can marinate the chicken for 20 minutes or you can prepare it in advance and let it marinate for a few hours in the fridge.

EASY LOW CARB CABBAGE CHICKEN TACO SOUP   




This Low Carb Cabbage Chicken Taco Soup is light, healthy and perfect if you are on a weight loss journey.  Just add Corn, Kidney beans and top it with nachos to upgrade it.
Ingredients
·         1 tbsp vegetable oil
·         1 tbsp Minced garlic
·         1 Medium onion Chopped
·         300 grams boneless skinless chicken breast Cut in to small chunks
·         1/4 cup celery Chopped
·         2 cups (heaping) cabbage Shredded
·         1 Medium red bell pepper Chopped
·         1 cup plum tomato Blanched and chopped / Canned
·         1/2 tbsp red chili powder
·         1/2 tbsp chipotle chilli powder
·         1 tbsp Roasted Cumin powder
·         2 tsp Dried Oregano
·         1 tsp Red chili flakes (optional)
·         2 cups chicken stock or Water
·         Salt to taste
·         1/2 cup sharp cheddar cheese
·         1/2 cup Fresh Coriander leave for garnishing
·         Lemon Wedges
Instructions
1.     Heat oil in a pot. add minced garlic. Saute till it starts to brown.
2.     add chopped onion. Fry till it is soft and translucent.
3.     add chopped celery, followed by chicken chunks. Fry for one minute.
4.     add shredded cabbage. Cook for 2 minutes. The cabbage will start to soften.
5.     add chopped red bell pepper. Cook for 30 seconds.
